Sweet and savory in the same bite, which is more Northern Italian than most American diners expect. The cream is built on four cheeses — Pecorino Romano, Gorgonzola, Parmigiano and the filling itself — so it is sharp and salty before the pear ever arrives. The pear is roasted slowly in butter until it goes soft and caramel-edged. The walnuts are candied for crunch. Rosemary keeps the whole thing from turning into dessert.
The pasta is imported fresh from Italy — we don't pretend to make it better than people who have done it for generations. Baked to order, so allow 25 to 35 minutes.
