PINSA IN ANCIENT ROME

Unlike regular pizza, its dough is made from a mix of wheat, rice, and soy flours. Because of these ingredients, it’s lighter and easier to digest. The dough is also fermented for up to 72 hours. This long process makes the crust crispy on the outside and soft inside. As a result, you get a tasty flatbread that won’t leave you feeling heavy.

THE SCIENCE BEHIND IT

What makes Pinsa different? It starts with the flour. We use a blend of wheat, rice, and soy.

WHEAT FLOUR helps with the taste and keeps water in the dough.

SOY FLOUR adds protein and fiber, making it nutritious.

RICE FLOUR makes the crust crispy.

Next, time is key. The dough rises for 72 hours in a cold place. During this time, gluten, a protein that can be hard to digest, breaks down. This makes Pinsa easier on your stomach. The long fermentation also creates a unique flavor.

ITALIAN BIOLOGICO VS U.S. ORGANIC

We care about quality, so we use Italian biologico flours. While both biologico and U.S. organic flours avoid chemicals, they’re different. Italian biologico flour often uses ancient wheat types. These are easier to digest and have more nutrients. They’re also stone-milled, keeping their natural goodness.
